Ingredients
4x6oz sirloin steaks
Seasoning
15 fl oz Soured cream
200g oz Roquefort cheese
Rocket leaves
2 small Red onion finely sliced
2 Garlic cloves – crushed
reduced Balsamic vinegar
4 Beef tomatoes
8oz olive oil
4oz Groundnut oil
51/2fl oz white wine vinegar
3 sprigs of tarragon – chopped
¼ bulb garlic chopped
Method
To serve
Mix the rocket, garlic, red onion place on a large pasta plate. Dress with the vinaigrette, balsamic and creamed roquefort place the beef on top, with the baked tomato.
