Description
Local cheese handcrafted by Cream O’ Galloway at The Ethical Dairy in Gatehouse of Fleet, this Swiss-style, semi-hard cheese is made using unpasteurised cow’s milk from their own herd. The curds are carefully hand-ladled into colanders, where they are drained and turned – creating a naturally dried, golden yellow cheese with a creamy yet crumbly texture.
Aged for around three months, Finlays Rainton Tomme develops a mellow but punchy flavour, with sweet, grassy, and nutty notes. Its rich character and artisan production make it a standout example of ethical, local cheesemaking in Dumfries & Galloway.
