The shin of beef from our Galloway cattle is a richly flavoured, well-exercised cut from the lower leg. It contains a high amount of connective tissue (collagen), which, when slow-cooked, breaks down into a luscious, silky texture—perfect for hearty stews, casseroles, or braised dishes.
